Chilli Con Veggie (Vegan)
In this post I will be showing you how to create the perfect vegan chilli.
For this recipe you will need-
Ingredients: 4 mushrooms
1 Pepper
1 Onion
3/4 Carrots
Tinned Chopped Tomatoes
Red Kidney Beans
Schwartz Chilli Sachet
Any extra spices you may like to add
Additional Ingredients: Rice
Olive Oil
Chopped garlic
Step two: Begin to chop up all of your veggies how you desire and place them to one side. Do not forget to keep moving the onions to prevent them from burning and add in around a tea spoon of chopped garlic.
Step Three: Once the onions are close to being cooked add in the mushrooms and peppers.
Step Four: In a large pan add in the red kidney beans, chopped tomatoes and schwartz chilli mix and bring to a slow boil. Once boiling add in your chopped carrots as these take the longest to cook.
Step Five: Once the onions, mushrooms and peppers are all cooked, lower the heat and check on the carrots in the chilli sauce by using a fork to carefully take one carrot out and place it on a chopping board, seeing if it cuts in half at ease. If this does not happen then put the halves back in the pan and leave it too cook for a few more minutes, repeating this process until the carrots are cooked.
Step Six: After everything is cooked add in the onions, peppers and mushrooms to the large pan and allow them to sit in and soak up all the chilli flavours for a further 5 minutes before serving with a portion of rice.
