Quick Vegan Pancakes
In this post I will be showing you a fairly quick recipe for pancakes!
Makes around 6-8 Pancakes
Ingredients: 1 Cup of flour
1 table spoon of sugar
a pinch of salt
1 cup of dairy-free milk
2 tablespoons of your preferred oil
Toppings
- For the cup of flour I used self-raising flour for this recipe as I didn't have any other rising agent to make them fluffy.
- For the sugar we use the brand 'Splenda' so I used this instead of regular sugar.
- I used Soy milk for the dairy free milk
- My preferred oil was olive oil, but you could use; coconut oil, sunflower oil or vegetable oil.
- For toppings we had: Peanut butter, Jam, Banana, Strawberry, Orange, Lemon Juice and Sugar.
Step One: Gather all of your ingredients together along with a large mixing bowl, first you want to mix all of the ingredients together apart from milk and oil with a whisk. I did this in order, so flour then sugar and then a pinch of salt.
Optional Step: I heated the oven on a low heat so that after each pancake you can place them in the oven to keep them warm.
Step Two: Add in the dairy free milk and oil, whisk at the same time with a slow pour. I found that the batter did seem to be a bit lumpy. But give it your best shot and if you are really struggling to get them out then I would say that you will be okay, as they seem to vanish when you start to cook them - granted that they are not actual clumps of dry mixture.
Step Three: Heat a frying pan on the stove at around the number 6 and add a light spray of oil to avoid the pancake from sticking to the pan. (I used Fry Light - Olive Oil) Once the pan is hot, either slowly pour in a small amount to the pan or use a large ladle to scoop out the mixture and place it in the pan.
Step Four: Make sure that you keep a close eye on the pancakes as they can cook quite quickly. The pancake will begin to form little holes, this is completely normal and means it ready or nearly ready to be flipped.
Step Five: Using a spatula carefully run it around the edges to unstick the pancake and then slowly ease it underneath and flip it over. Once the other side has cooked you can have a go at flipping it without the spatula!
Step Six: Repeat this process until you have run out of mixture. Because the pancakes are more of a crepe style and we wanted a stack of pancakes I did another batch but only a half batch, if you want to this then just do the ingredients again but only measure out half of each and repeat until you have enough pancakes.
Step Seven: Top your pancakes with anything and everything!
