The perfect vegan banana bread!

In this post I will be showing you how I baked the perfect banana bread. I feel that this recipe is quite a healthy one, so a guilt-free treat.


Ingredients: 
3 bananas
1 flax egg
1/4 cup of soy milk
1/4 of light brown sugar
1/4 of medium or dark brown sugar
2 cups of plain flour
1/2 teaspoon of vanilla extract
1/2 teaspoon of almond extract
1 teaspoon of cinnamon
1 teaspoon of baking powder
1/2 teaspoon of salt

Optional:
sliced banana for decoration

Step One: Pre-heat the oven to 180 degrees celsius and lightly grease a bread pan. 

Step Two: To begin this recipe you will need to mash 3 bananas in a large mixing bowl, you want it the consistency to be smooth with a few lumps. To the mashed bananas you want to add the sugar and flax egg.



Step Three: Add in the soy milk, vanilla extract and almond extract. whisk everything together. 

Step Four: Once you have whisked all the above together add in the plain flour and all the small dry ingredients (cinnamon, baking powder and salt) i sifted all of these ingredients into the bowl too make sure everything would be smooth. 



Step Five: make sure everything is mixed, go around the bowl with a wooden spoon to ensure you get all the flour or batter which may have moved to around the top of the bowl and then transfer everything to the lightly greased pan. 

Step Six: top the batter with slices of banana in which ever pattern you would like.

Step Seven: Place the banana bread into the oven for around 50 minutes and then a further 10 minutes but with tin foil over the top to help brown the banana bread. Banana bread should never be rushed as this is when it gets ruined or doesn't seem to finish right.
