Vegan Sugar Cookies!


In todays post I will be showing you my recipe for vegan sugar cookies. 



Ingredients
115 grams of vegan butter
150 grams of granulated sugar
1 and a half teaspoon on vanilla extract
250 grams of plain flour
A pinch of salt
2 table spoons of Soy milk
Icing sugar


Method:

Step one: First you will need to combine the sugar and butter to create a cream. Then add in the vanilla extract, for this I used Madagascan vanilla extract - This is just personal preference any variation of vanilla will do!



Step two: Next, in a bowl put the flour, sift it and add the bicarbonate of soda and salt.
I currently do not have a sieve so to give the same effect I used a fork to whisk through the flour and attempt to eliminate any clumps.



Step three: Add in the dry ingredients to wet ingredients and knead the mixture. It should be rather crumbly. You need to add in the Soy milk and knead it again to create a ball.

Step four: Pre heat the oven to 180 degrees celsius.

Step five: Roll out your dough, you may need to do this in sections so that you can ensure you have the correct width, I would say around 5-6 mm is a good width but slightly thinner or thicker is also good.



Step six: Cut out your shapes, you could simply so some circles or maybe get more creative. I attempted to create halloween themed cookies with witches hats, cats, pumpkins and ghosts.






Step seven: Place the cookies on to the baking paper on a baking tray and put it into the oven for around 10-11 minutes. They should be golden when they come out.

Step Eight: Leave to cool completely before decorating!
