Baking with Kids - Paw patrol cupcakes
Me and my brother have a large age gap of 16 years, since I no longer live at home I dont actually get to see him much. As he is getting older I do miss him and worry that our bond may not be as strong as it could have been if i did live at home. So when my mum asked if me and Ethan could come over for the night to look after him while my mum and step dad had their first spa night away together in 4 years I practically jumped at the idea. For the weeks leading up to it I was thinking up things we could do together, since I dont currently drive its a bit harder since we couldn't really take him out. So I decided to bake Paw Patrol cupcakes with him, baking with a child can be quite a stressful ordeal so this is how we kept it going smoothly.
Step One: Since I am vegan, I decided to use a flax egg instead of a regular egg. When we were preparing the ingredients George instantly went to get the eggs, I then had to explain that we were doing our cakes differently this time.
I asked to George to scoop into a small dish 1 tablespoons worth of flax seed. Since he only has little hands we split this into thirds on the spoon until it equalled a whole table spoon. We then moved over to the sink to put in the two and a half tablespoons of water which also had to be split up so that we didn't go under or over the amount, slow and steady! He then mixed it up with the spoon and we left it to one side for 10 minutes to set.
Step Two: While you are waiting for the flax egg to set, we put some music on and placed the cupcake cases into the tray.
Step Three: Once the flax egg has set, add to a bowl the cake mix, flax egg and the soy milk. Mix all of this together with the help of your little helper. I found that if I mixed it first to get it going and make it easier for them then they wont get disheartened.
Optional Step: Add in a drizzle of vanilla flavouring to your mixture and then mix again.
Step Four: Once everything is mixed you can add the mixture to the cake cases, we used around 1.5 tablespoons of mixture per cake case. Make sure that you tell them where to put the mixture because it ends up all over the tray and there is more mixture on the tray than in the cases! But maybe thats part of the fun.
Step Five: Place in the oven on 180 degrees Celsius for around 12-15 minutes but come back to check on them after 10 minutes! they should be golden brown when they are finished!
In the time that you are waiting for the cupcakes to bake you can clean up any mess that has been made, and make it fun with some music and dancing so that they can learn about clearing up after themselves whilst also making it an enjoyable experience.
Step Six: Once the cakes have finished baking leave them on the side to cool down for around 20 minutes.
Step Seven: Into a bowl pour in the icing sugar and 2-3 teaspoons of water, but WAIT! before you add the water make sure your little helper can see, the icing sugar in the pack is white but when you add the water it turns blue, Magic!
Step Eight: Spread the icing over the cupcakes one small spoonful at a time and then add on the edible paper wafers.
Step Nine: and that is all there is to it! They wont be the prettiest cakes or the most 'aesthetically pleasing' but you will have such a fun time bonding and baking that it wont matter, they taste great.
To finish the process off, make a hot chocolate each and take one or two of your cupcakes to go and chill out after all your baking together!
